Filling Ingredients for Pistachio-crusted Rhubarb Crisp

  • 4 cups - Rhubarb (washed and chopped)
  • 1 - Lemon (zest & juice)
  • ½ cup - Sugar (white)
  • 3 Tbsp - Water
  • 1 Tsp - Vanilla Extract

Topping Ingredients for Pistachio-crusted Rhubarb Crisp

  • ½ cup - Oats (rolled)
  • ½ cup - Pistachios (chopped)
  • ½ cup - Buckwheat flour
  • ½ cup - Sugar, Brown
  • 1 Tsp - Cinnamon
  • ½ cup - Butter (soft)
  • Pinch (to taste) - Salt

Pistachio-crusted Rhubarb Crisp Recipe Instructions

  • Preheat the oven to 350 F
  • Chop and wash rhubarb - Allow to drain and air dry
  • Measure out and assemble ingredients for the topping
  • Gently massage the butter into the dry topping ingredients and place on top of rhubarb filling
  • Place the baking dish in a preheated oven and bake for 45-65 min depending on how the oven bakes.
  • Remove and cool on the counter or wire resting rack.
  • Make whipped cream
