Pan-Seared, Oven-Roasted Artichoke Recipe Ingredients

Core Ingredients for Pan-Seared, Oven-roasted Artichokes

  • 2 - Artichokes
  • 1 - Lemon
  • ¼ - Onion
  • 2 cloves - Garlic

Additional recipe ingredients:

  • Olive oil - for searing
  • Salt - to taste
  • Pepper - to taste

Pan-Seared, Oven-Roasted Artichoke Recipe Instructions

  • Clean and remove “choke” from the artichoke.  
  • Rinse artichoke with water and steam in 1 inch of water with half a lemon, garlic and onion for 30-40 min.
  • After 35 min remove artichoke from the steam bath and allow to cool on the counter.
  • Preheat the oven to 375 degrees.
  • Once cooled, season the inside of the artichoke with salt and pepper
  • Get a cast iron pan (Chef Keri’s preferred pan for searing, but any pan will do) hot and pour 2 oz of olive oil in the pan.
  • Sear the artichokes face down in the pan until they are crispy and golden brown.  
  • Flip the artichoke over and place the pan in the preheated oven to finish heating through (about 12 minutes).
  • Remove the artichokes from the oven, squeeze fresh lemon juice over them, and serve hot with the citrus aioli.
